Gluten-free dishes

Gluten is found is certain cereals, such as barley, wheat and rye. It’s not easy to create a gluten-free menu, because it’s found in so many food industry products.

This means eliminating many typical main courses, such as pasta and potato gnocchi. The same goes for bread, focaccia and pizza. And for patisserie, such as tarts, pastries, cakes and biscuits.

Polenta taragna is well known in the Valtellina region, but its main ingredient, buckwheat flour, is related to wheat flour, making this another food to avoid for people with coeliac disease.

Not to mention meat, fish and vegetables coated in flour that contains gluten.
